Acetification refers to a process by which wine or other alcoholic beverages undergo a chemical transformation into vinegar. There are several synonyms one can use to describe this process. For example, vinegarization, acetic acid fermentation, and souring are just a few. Acetification can also be referred to as the conversion of alcohol to acetic acid. This process occurs naturally as a result of bacterial action, although it can also be artificially induced by exposing the beverage to air or other oxidizing agents. Regardless of the method used, the end result is a tangy, acidic flavor that can make a great addition to many different dishes.
