Borscht, sometimes spelled as bortsch, is a sour soup dish originating from Eastern Europe. This soup is made using beetroot, which gives it a characteristic bright crimson color. Other vegetables, meats, and sour cream are also added to the soup to give it a distinct flavor.
There are many synonyms for borscht depending on the variations of the recipe. Some traditions add cabbage or tomato to the soup, and others add meat or dumplings. In Ukraine, the soup is called kharcho; in Russia, it's schi. In Poland, the soup is known as barszcz, and in Lithuania, it's called šaltibarščiai.
It's a popular dish across Eastern Europe, particularly in winter months when it's served hot with a dollop of sour cream.
